These creamy Biscoff overnight oats taste like your favorite cookie butter, in oatmeal form! If you love that warm caramel-y flavor of cookie butter, these easy-to-prep overnight oats will become your new favorite grab-and-go breakfast.

Overnight oats are one of my favorite ways to enjoy oatmeal. First of all, you only need about 5 minutes for prep, and there's no cooking involved. (Which is good for me, because I always manage to overflow the pot, making a big slimy mess on my burner. Can anyone else relate?)
I've made several overnight oats recipes so far (see my recipes for maple brown sugar overnight oats, chocolate protein overnight oats, and banana chia overnight oats!). This one is my new favorite because I love anything with cookie butter.
These cookie butter overnight oats have a generous scoop of Biscoff cookie butter mixed in, plus brown sugar and cinnamon to enhance that warm caramel-y flavor. The thick and creamy texture is from adding just the right amount of milk, plus Greek yogurt and chia seeds.

Ingredient notes
- Brown sugar: I like using dark brown sugar because it has a deeper flavor. But, either light or dark brown sugar will work well.
- Greek yogurt: you need plain, unsweetened Greek yogurt. If you want to use a flavored yogurt, you may want to add a little less brown sugar (you can always add more at the end if needed).
Step by step photos
Here's how to make the Biscoff overnight oats, step by step:

Step 1
In a jar or bowl (or whatever container you want to store the oats in), mix together the cookie butter and Greek yogurt. I love using my mini whisk for this task! (affiliate link).

Here I'm using my new favorite Weck glass bowls (affiliate link). At 15.2 ounces, they're the perfect size for one serving of oats. I prefer these over my usual 16-ounce Ball jar, because the wider opening gives more surface area for toppings!

Step 2
Add the remaining overnight oats ingredients into the bowl.

Step 3
Mix the oatmeal ingredients together well. Make sure all the cookie butter/yogurt mixture has been combined into the rest of the ingredients.

Step 4
Add a lid onto the container. Place the overnight oats into the fridge for a minimum of 6 hours.

Step 5
When you're ready to enjoy the oats, give them a stir. You can garish the oats with more cookie butter and/or Biscoff cookies if you like!
Tips and tricks
- Don't worry if the oats seem on the runny side after they are mixed. A lot of the liquid will be absorbed by the oats and chia seeds. So, after they rest in the fridge they should be nice and creamy.
- You need a minimum of 6 hours for the oats to rest in the fridge. However, the oats will be even thicker and more creamy if you wait longer, around 10 - 12 hours, or up to 24 hours. You can wait even longer if you like; the oats will stay good for a total of 3 - 4 days in the fridge. However, the longer you leave the oats in the fridge, the mushier they will become.
- To make a cookie butter drizzle to garnish the overnight oats, put 1 - 2 tablespoons of cookie butter in a small, microwave-safe bowl. Microwave for 10 - 15 seconds on high, or until the cookie butter is runny.
Recipe FAQs
You can serve the oats garnished with more cookie butter (either at room temperature or warmed up to make a drizzle). The oats also taste great with crumbled Biscoff cookies on top. You can also add chopped fresh fruit or dried fruits, nuts, or pumpkin seeds. If the oats are too thick for your liking, you can also add a splash of additional milk.
I prefer to use old-fashioned rolled oats for overnight oats. I think they hold up better to the overnight soak without becoming mushy.
However, I have also made overnight oats with quick (1-minute) oats. After soaking they have a softer, more uniform texture than the rolled oats, but still tasted good. So it's up to you depending on what texture you prefer and what ingredients you have on hand.
I would not recommend using instant oats however, as those have an even finer texture than quick oats. If you're interested, here is an article on the difference between various types of oatmeal.
You can eat overnight oats either cold straight from the fridge, or warmed up, depending on what you prefer. To enjoy the oats hot, microwave them in a microwave-safe container, on high for 1 minute. Stir, and microwave again in 30 second increments on high, stirring in between, until hot.

Creamy Biscoff Overnight Oats

Ingredients
- 2 tablespoons (30 g) Biscoff cookie butter
- ¼ cup (57 g) plain unsweetened Greek yogurt
- ½ cup (40 g) old-fashioned rolled oats
- ½ cup (122 g) milk
- 1 tablespoon (13 g) packed brown sugar
- 1 tablespoon (12 g) chia seeds
- ¼ teaspoon cinnamon
- pinch salt
Instructions
- Add the Biscoff cookie butter and Greek yogurt to a bowl or glass jar (around 15 - 16 ounces in size). Whisk or stir well to combine.
- Add the remaining ingredients to the container. Stir well to combine.
- Add a lid to the container and place it in the fridge for a minimum of 6 hours, or up to 24 hours. When ready to eat, stir the oats well and add your favorite toppings (see note 2 for topping ideas).
Notes
1. Six hours is the minimum amount of rest time in the fridge I recommend. But, for creamier oats you can leave them in the fridge for 10 - 12 hours, or even up to 24 hours. Leftovers will last for an additional 2 - 3 days.
2. For even more Biscoff flavor, you can top the oats with a Biscoff cookie butter drizzle. To make the drizzle, add 1 - 2 tablespoons of cookie butter to a small microwave-safe bowl. Microwave on high for 10 - 15 seconds, or until runny. The oats also taste great garnished with crumbled Biscoff cookies and/or chopped fresh fruit (apple, pear, banana, and/or strawberry are my top favorites!).
