Creamy Biscoff Overnight Oats

Overnight oats with a thick, creamy texture and full of warm cookie butter flavor, thanks to lots of Biscoff cookie butter, cinnamon, and brown sugar!

Ingredients

  • 2 tablespoons (30 g) Biscoff cookie butter
  • 1/4 cup (57 g) plain unsweetened Greek yogurt
  • 1/2 cup (40 g) old-fashioned rolled oats
  • 1/2 cup (122 g) milk
  • 1 tablespoon (13 g) packed brown sugar
  • 1 tablespoon (12 g) chia seeds
  • 1/4 teaspoon cinnamon
  • pinch salt

Instructions

  1. Add the Biscoff cookie butter and Greek yogurt to a bowl or glass jar (around 15 - 16 ounces in size). Whisk or stir well to combine.
  2. Add the remaining ingredients to the container. Stir well to combine.
  3. Add a lid to the container and place it in the fridge for a minimum of 6 hours, or up to 24 hours. When ready to eat, stir the oats well and add your favorite toppings (see note 2 for topping ideas).

Notes

1. Six hours is the minimum amount of rest time in the fridge I recommend. But, for creamier oats you can leave them in the fridge for 10 - 12 hours, or even up to 24 hours. Leftovers will last for an additional 2 - 3 days.

2. For even more Biscoff flavor, you can top the oats with a Biscoff cookie butter drizzle. To make the drizzle, add 1 - 2 tablespoons of cookie butter to a small microwave-safe bowl. Microwave on high for 10 - 15 seconds, or until runny. The oats also taste great garnished with crumbled Biscoff cookies and/or chopped fresh fruit (apple, pear, banana, and/or strawberry are my top favorites!).
