This is a creamy, cheesy soup featuring chunks of savory ground beef and tender potatoes. Serve with crusty bread for a satisfying comfort meal!
Cube potatoes and chop onions.
Cook onions and beef in a soup pot, until onions are translucent and beef is browned.
Add potatoes, flour, and seasonings to the pot. Stir and continue to cook for about 1 minute.
Pour in the beef broth and stir. Bring soup to a boil, and boil for 1 - 2 minutes. The soup broth will begin to thicken.
Then, turn the heat down to bring the soup to a simmer. Let the soup simmer for about 20 minutes, or until the potatoes are tender.
Turn off the stove and move the pot off the hot burner. Temper the sour cream by gradually mixing in some of the hot soup broth. Mix the sour cream into the soup.
Mix in the shredded cheese.
Serve the soup garnished with your favorite toppings (try more shredded cheese and sliced green onions!
