Cinnamon Muffins!

These moist muffins have cinnamon: - in the batter - in a crunchy brown sugar cinnamon topping - AND in a ribbon running through the center!

Step 1

Add silicone or paper cupcake liners to a 12 cup muffin tin. Or, spray the tin well with nonstick spray.

Step 2

Mix together the cinnamon and brown sugar to make the cinnamon sugar topping. Set this aside for now.

Step 3

In a large bowl, whisk together the dry ingredients (flour, baking powder, salt, cinnamon, and nutmeg).

Step 4

In a separate bowl, whisk together the brown sugar, granulated sugar, eggs, oil, milk and vanilla.

Step 5

Now gradually add the dry ingredients into the wet ingredients. Whisk until just combined, don't overmix!

Step 6

Fill the prepared muffin tins about 1/3 of the way full with batter. A dry measuring cup works well as a muffin batter scoop!

Step 7

Sprinkle some of the cinnamon sugar mixture you prepared earlier onto the batter in each muffin tin. Then, top with the remaining batter.

Step 8

Sprinkle the remaining cinnamon sugar mixture over the top of the full muffin tins. Bake the muffins until a toothpick inserted comes out clean, and the tops are crackly.


- If desired, add an extra 1/2 teaspoon cinnamon to the cinnamon brown sugar topping.  - For best results, measure the flour by weight, or the spoon and level technique.
