Step 1: Grind the cashews in a food processor until they are finely chopped (9 - 10 one-second pulses).

Here's how to make the apricot balls!

Step 2: Remove the ground cashews from the food processor, and separate out a small amount (for coating the outside later).

Step 3: Place the dates and apricots in the food processor. Roughly chop the dates and apricots (about 5 one-second pulses).

Step 4: Zest the orange (you need 1 teaspoon). Cut the orange in half and squeeze out 1 tablespoon of juice.

Step 5: Add the orange zest and juice to the fruit in the food processor. Add the honey (if desired). Pulse a few times to combine.

Step 6: Add the cashews back to the food process0r (minus reserved amount). Pulse until evenly combined.

Step 7: Roll the mixture into balls. Roll the apricot balls in the reserved chopped cashews until evenly coated. Store the balls in the fridge or freezer!

-if the mixture is sticking, wet your hands before rolling or place the mix in the fridge for 5 - 10 min. - feel free to substitute another nut for the cashews!
