Step 1: Mix together the melted butter, lemon zest, and panko breadcrumbs, plus half of the seasonings (paprika, salt and pepper, garlic powder).
Step 4: Season the cod fillets with the remaining seasonings (paprika, garlic powder, salt, and black pepper).
Step 6: Pat on the buttery seasoned panko. Be sure to cover the tops and sides of the fish completely!
Step 7: Place the panko crusted cod onto a baking sheet lined with parchment paper.
Step 8: Bake the panko crusted cod in a preheated 425° F oven for 10 - 15 min, or until the cod reaches an internal temp of 145° F.
RECIPE TIPS: -don't pat the panko on too hard! Looser crumbs will crisp up more in the oven. -you can easily melt the butter in the microwave, just 15 - 20 seconds on high. -a Microplane is a great tool to finely zest the lemon!
