Step 1: Squeeze the fresh lemon juice. You will need 1 cup fresh lemon juice (about 6 - 8 lemons).
Step 2: Mix together the lemon juice, cold water, and sugar. Whisk until the sugar is dissolved (this may take a min or two).
Step 3: Pour the lemon popsicle mix into popsicle molds (a pitcher or liquid measuring cup makes this easier!).
Step 4: Add the sticks to the mold and place in the freezer for 4 - 6 hours, or until the lemon popsicles are fully frozen.
Step 5: When the popsicles are frozen solid, unmold and enjoy! (For easier unmolding, let the mold sit at room temp for 2 - 3 min.
