You will love this chicken tater tot casserole! – The creamy base is made from scratch, without condensed soup. – But, with rotisserie/ leftover chicken and frozen veggies, it's ready in only 1 hour!

Recipe Ingredients:

Step 1: Place a large pot on the stove. Melt the butter in the pot, set over medium-high heat.

Here's how to make the casserole:

Step 2: Cook the onion and seasonings in the butter for 3 - 4 minutes, or until the onion is translucent.

Step 3: Add in the frozen peas and carrots. There is no need to thaw them first! Cook for 3 - 4 minutes.

Step 4: Sprinkle the flour into the pot. Stir the flour into the veggies, and cook for an additional minute, stirring frequently.

Step 5: Add the broth into the pot. Stir the broth into the veggies, scraping up any stuck bits on the bottom of the pot. Gently boil for 4 - 5 min.

Step 6: Add in the shredded chicken and sour cream. Taste the mixture and add in more salt & pepper if you like.

Step 7: Pour the chicken casserole mixture into a 9 x 13 inch casserole dish, spread it out evenly.

Step 8: Add the frozen tater tots on top of the casserole in an even layer. Bake the casserole for 30 - 35 minutes or until the casserole is bubbly.
