Strawberry White Chocolate Muffins

Recipe ingredients: 1. strawberries 2. white chocolate chips 3. lemon zest 4. flour 5. sugar 6. eggs 7. milk 8. oil 9. salt 10. baking powder 11. (optional) coarse sugar

Step 1: whisk together the dry ingredients in a large bowl. Make a well in the center.

Here's how to make the strawberry white chocolate muffins!

Step 2: Break the 2 eggs into the well. Use a whisk to break up the yolks. Beat the eggs a bit inside the well of dry ingredients.

Step 3: Add the milk and oil. Whisk the wet and dry ingredients together, just until combined (batter will still be lumpy).

Step 4: Add the chopped strawberries, lemon zest, and most of the white chocolate chips to the muffin batter. (Reserve 1/4 cup chocolate chips for later!)

Step 5: With a wooden spoon, gently stir together the batter, just until the chocolate chips and strawberries are evenly combined.

Step 6: Fill a lined muffin tin with the strawberry white chocolate muffin batter. Top the muffins with the remaining 1/4 cup chocolate chips and, if desired, the coarse sugar!

Step 7: Bake in a preheated 400 degree F oven until the muffins are firm on top and nicely browned! Let cool for 10 minutes before moving the muffins to a cooling rack.
